Greetings from Spillian in the Catskills

Here in the Catskills, the first snow has fallen, and as I write this, there’s more snow coming down with about an inch on the ground….Winter is moving in, and with it, all the delights of snow, warm fires, holiday libations and warm cozy nights.  

Come join us for our next Mythic Weekend—   Find Your Holiday Spirits: December 6-8 at the Spillian Mansion.

We’ll introduce you to an extraordinary group of makers who bring the soil, water, and grains and fruits of the Catskills to life as ciders, beers, and spirits. You’ll wander with the inspiring team from Table to Farm Tours on a private tasting tour to several of the finest craft brewers and distillers in the country, and learn how they make their magic in bottles and kegs.  

And you’ll discover some of Spillian’s favorite mixed drink magic—try your hand at mixology, and celebrate with some special musical guests…and, of course, feast. The food. Oh, the food…

Spillian is delighted to partner with Table to Farm Tours to invite you to come and taste – literally and metaphorically – the terroir of the Catskills ciders, beers, and spirits and bring some back to your hearth for your celebrating this holiday season.

Imagine Past What You Think Is Possible


A lodge and creative center, Spillian has brought one of the last remaining 19thC hotels in the Catskills back to life. Proprietors Leigh Melander and Mark Somerfield have saved one of the great camps built by the Fleischmanns Yeast family, a 33 acre estate centered around a superb Stick-Style mansion with extraordinary oil murals painted on clear pine paneled walls, honoring both its traditions as a family retreat and a summer hotel. Spillian is an old English word that means 'to play, to jest, or to revel.' Our goal is to share a place where people can play with new  ideas, imagine past what they think is possible, lightly, and with delight. Spillian welcomes custom-designed group and corporate retreats, reunions, weddings, and offers a growing array of workshops exploring how visitors can imagine past what they believe is possible in a variety of disciplines.
